We love pizza for breakfast, but it usually comes in the way of leftovers from the night before. Here is the perfect breakfast veggie pizza to serve up to your family. Fresh, simple to make, and perfect with fresh fruit and that first cup of coffee, tea, or juice in the morning.
This pizza also makes a great appetizer when having guests over for game night. But plan ahead and make plenty so you have some leftover for the next morning!
Breakfast Veggie Pizza
Ingredients:
- 2 tablespoons Crisco 100% Extra Virgin Olive Oil
- 1 can of Pillsbury refrigerated classic pizza crust
- ½ lb. of bulk Italian pork sausage (spicy works best)
- 4 cups thinly sliced zucchini (2 medium)
- 1 medium onion, thinly sliced
- 1 medium green bell pepper, chopped small
- ¼ teaspoon salt
- 6 eggs
- 1/3 cup grated Parmesan cheese
- 1/8 teaspoon ground black pepper
- 1 cup (4 oz.) shredded cheddar cheese
Directions:
Preheat your oven to 425 degrees.
Grease a large cookie sheet with 1 tablespoon of the oil.
Unroll pizza crust dough onto the cookie sheet; press into 16×13-inch rectangle.
Bake 8 minutes.
Meanwhile, in 12-inch nonstick skillet, cook sausage 5 to 7 minutes over medium-high heat or until sausage is no longer pink, stirring frequently.
Transfer sausage to small bowl; set aside.
Add remaining 1 tablespoon oil to skillet.
Cook zucchini, onion, bell pepper and salt over medium heat.
Stir frequently, and until vegetables are crisp but tender, about 10 minutes.
Add sausage to vegetable mixture; stir to combine.
In a medium bowl, beat eggs with a whisk. Beat in Parmesan cheese and pepper.
Drain the vegetable-sausage mixture, if necessary.
Pour egg mixture into a skillet; stir to combine.
Cook over medium heat 1½ – 2 minutes or until eggs are partially set, stir occasionally.
Spoon vegetable, egg and sausage mixture onto a prebaked pizza crust to within ½ inch of pizza edge.
Top with Cheddar cheese.
Bake 6 to 10 minutes or until egg is set, cheese has melted and the crust is a golden brown.
Let stand 2 minutes before serving, and enjoy!

Another great cheese topping is the pizza cheese found pre-packaged.
This pizza tastes great when served with cantaloupe, fresh strawberries, or pineapple chunks.
