Chicken salad sandwiches are perfect for spring and summer. Lunch, snacks, or the perfect picnic food, you’ll want to hold onto this recipe. Creamy chicken with a perfect crunch from walnuts and grapes, this chicken salad will have your mouth watering!
- 1 lb. cooked chicken, shredded (I grilled mine with olive oil, salt, and pepper)
- 2/3 cup mayo, sour cream, or a mixture of both
- 1/2 cup quartered red grapes
- 1/2 cup finely sliced celery
- 1/4 cup chopped walnuts
- salt and pepper to taste
If necessary, cook and shred chicken with two forks. Allow to cool.
In a large bowl, mix grapes, celery, walnuts, mayo or sour cream, and salt and pepper to taste.
Add cooled shredded chicken and mix.
Serve on sandwiches with toasted bread or on top of a green salad.
