A quick and easy alternative to the Reuben sandwich, this dish promises to be a hit at your next St. Patrick’s Day get together, family picnic, party, or reunion. One suggestion, make sure you have the recipe on hand with you to share with others; they will ask you for it!
1 cup sour cream
1 large can sauerkraut, drained
1 medium vidalia onion, diced
Mix the above ingredients together and place in a 13 x 9 pan.
Crumble 2 cans (1 lb.) corned beef over the sauerkraut mixture.
Top with 12 – 16 oz. of crumbled swiss cheese.
Crumble up 10 slices of rye bread over the swiss cheese.
Drizzle ½ lb. of melted butter over the top of the bread.
Bake at 350 degrees for 45 minutes.
