This recipe calls for ½ cup of raisins It is really delicious when you add ½ cup of dried cranberries. My favorite is the Ocean Spray dried cranberries. If you add both raisins and cranberries together, you give this salad a truly impressive appearance. Get creative and make it your own.
Ingredients:
- 6 cups of small broccoli florets
- ½ cup chopped celery
- ½ cup raisins
- 10 slices of bacon, cooked and crumbled (I like using thick bacon)
- 3 green onions, sliced (optional, can use ¼ cup of chopped Vidalia onion)
- 2/3 cup of mayonnaise (no salad dressing here)
- ¼ cup of honey
- 1 tablespoon lemon juice
- 1 package of honey roasted sliced almonds (3.75-ounce pkg.)
Directions:
Combine the first 5 ingredients in a medium sized bowl.
Using a small bowl combine the mayonnaise, honey and lemon juice.
Pour the sauce over the broccoli mixture tossing to evenly coat.
Prior to serving stir in the almonds, more or less to your preference.
Suggestions:
Other ingredients you can add are: freshly cut grapes, and honey roasted peanuts – delicious – but make sure no one has an allergy to peanuts first if you add these.
