Cheesy Potatoes

Potatoes and cheese – what a delicious combination. Let’s make the perfect casserole dish to serve with your favorite meat and vegetable for dinner.

When it comes to cheesy potatoes I have made this recipe many times over. I was not the first in my family to make it, however. That credit goes to my niece, Jackie. Since that day, our family has created this casserole dish at least a hundred times, probably more.

Even though the ingredients are the same, we have each put our own twist to the recipe tweaking it to become our own. The following is my recipe that I have made for holidays, birthday gatherings, and reunions. I hope you enjoy it as much as our family does, and that you receive the compliments it well deserves!


Mix all together:

  • 1 30 oz. package hash brown potatoes
  • 1 30 oz. package hash brown potatoes with peppers and onions
  • 6 Tablespoons of melted butter
  • ½ teaspoon garlic salt
  • 1 pint of sour cream
  • 1 can of cream of chicken soup
  • 8-16 ounces of shredded cheddar (the more the better)


Mix together and place on top of your potato and cheese mixture:

  • 6 Tablespoons of melted butter
  • 2 cups of corn flakes

Place the potato and cheese mixture into an ungreased 9 x 13 dish.

Place topping mixture on the potato and cheese mixture already in your dish.

Bake at 350 degrees for 1 hour


I like to sprinkle more cheddar cheese on top after 55 minutes of baking time, delicious!
