In continuing with my series of heirloom recipes found in a box at auction, here is one recipe that, until now, I have never tasted or even heard of, nor can I find a recipe anything like it on the internet. This just may be something my grandmother decided to whip up on a whim and jotted down her creation afterwards. Grandma knew what she was doing because I can now guarantee toss burgers are delicious making, too, for a hearty family meal.
This recipe is one that is easy enough to make while camping in an electric skillet or over the fire in a pan. At first I was hesitant, but now I am extremely glad I decided to give it a try at our camper. Because of its simplicity, there was very little cleanup to this dish.
The recipe calls for cornbread and honey to be served on the side. I decided to switch it up and serve my toss burgers on buns along with mashed potatoes, applesauce, and cottage cheese. With the leftovers that remained, I served that over white rice for lunch the next day – delicious!
This dish may not look very appetizing, but I received great reviews from my husband! I would recommend this recipe to anyone – and I rate it a 10!
Ingredients:
- 1 lb. ground beef
- 2 eggs (whipped)
- Salt & Pepper (to taste)
- 1 Large Onion (diced not too fine)
- 2 Tablespoons of Parsley
- 1 can of corn
- ½ lb. of American cheese – cubed
Directions:

Mix together in a bowl: beef, eggs, onion, salt, pepper, and parsley.
In a skillet brown the meat mixture, and then add your corn and American cheese. (Depending on the quality of meat used, drain some of the excess fat off but only if too much is seen in the pan. I left about 2 -3 tablespoons of fat in my skillet.)
When the cheese is completely melted serve this along with cornbread and butter.
Note:
You can use one small bag of frozen corn instead of canned.
I used a Vidalia onion, and ½ teaspoon of salt and ½ teaspoon of pepper.
This mixture would be great served over Grands biscuits!
