Why not change boring into fun when it comes to an early morning breakfast!
My grandkids never know what kind of concoction is being made in my kitchen but I can guarantee every meal including breakfast is never a dull one. Even the challenge of eating with a broken arm has recently been taken into consideration when preparing meals. The more finger foods the better and this recipe is a perfect one to use.
With St. Patrick’s Day fast approaching, this will be the perfect time to treat your family to this delicious green pancakes recipe. Like so many others here in Geauga County, our family loves pancakes drizzled with Geauga County pure maple syrup. But let’s add a twist; how about a little bacon inside those pancakes! This may sound strange but there is just one word to describe this simple, fun, tasty sensation; perfect!
You can serve your pancakes with bacon and a small dish of maple syrup on the side for dipping. For those little ones learning to eat, and especially for those with a broken arm, this breakfast dish is perfect!
Ingredients:
- 2 cups of Bisquick original pancake & baking mix
- 1 cup milk
- 2 eggs
- 2 Tbsp. Sugar
- 2 tsp. baking powder
- 1 tsp. vanilla
- 4-6 drops of green food coloring (till color you want is achieved)
- Fried Bacon
Instructions:
Stir first six ingredients together; add food coloring when blended.
For each pancake, pour ¼ cup of batter onto a hot greased griddle.
Continue to cook until the edges are dry. Turn; continue to cook until golden.
Butter and serve
Makes 14 pancakes
Note: For the pancakes with bacon, pour your batter onto the griddle long ways and lay a piece of bacon down the center, (the more bacon the better) then top off with more batter. Cook pancakes until edges are dry, flip, and cook till lightly golden.
Suggestions:
I like to put our pure maple syrup in a honey bear. We have found with children (even adults) this is the easiest way to ensure they do not overuse the syrup and that the right amount pours from its spout.
