Chocolate Peanut-Butter No Bake Cookies

Ingredients:

2 cups sugar
4 tablespoons cocoa
1 stick butter
1/2 cup milk
1 cup peanut butter
1 tablespoon vanilla
3 cups oatmeal
Waxed paper

Instructions:

In a heavy saucepan bring to a boil, the sugar, cocoa, butter and milk. Let boil for 1 minute then add peanut butter, vanilla and oatmeal. On a sheet of waxed paper, drop mixture by the teaspoonfuls, until cooled and hardened.

No-Bake Cookie Dough Truffles

Ingredients:

1 cup soft butter
1 1/2 cups brown sugar, packed
2 teaspoons vanilla extract
1/2 teaspoon salt
2 cups all-purpose flour
1 tablespoon water
1 (6 ounce) package mini chocolate chips

Instructions:

Cream butter and sugar together.

Add remaining ingredients and mix well by hand.

Roll into bite-size balls.

Freeze until firm, about 30 minutes.

Store in a plastic zip-type bag in the freezer.

Let stand at room temperature 5 minutes before eating.

Chocolate, Coconut, and Almond Bars

Ingredients:

1 10 ounce package large marshmallows
3 tablespoons butter, softened
1/2 teaspoon coconut flavoring
2 cups sweetened flaked coconut
2 cups crispy flake and crunchy oat cluster cereal with honey and almonds
1 1/3 cups honey-flavor sliced almonds
1 cup miniature semisweet chocolate pieces

Instructions:

Line a 9x9x2-inch pan with foil, extending the foil over edges of pan. Butter foil; set pan aside.

In a large microwave-safe bowl microwave marshmallows and 3 tablespoons butter on 100 percent power (high) for 1 to 2 minutes or until butter is melted. Stir in coconut flavoring. Stir in coconut, cereal, and almonds. Cool slightly. Gently fold in chocolate pieces.

Press mixture lightly onto the bottom of the prepared pan. Let stand about 1 hour or until set. Using the edges of the foil, lift uncut bars out of pan. Cut into bars.
