Make your 4th of July Pop with a Firecracker Cake from In the Kitchen with Sheryl!

Summer celebrations will be in full swing this Fourth of July, so why not celebrate your red, white and blue with a cake recipe that will give your picnic or potluck that extra bang!

This recipe is great as a Bundt cake but it can also be transformed into cupcakes, a sheet cake or a double layer cake. Add lit sparklers and everyone will love your patriotic presentation!

Ingredients:

  • White cake baking mix
  • Red and blue food coloring
  • White frosting of your choice (I use Betty Crocker Ready to Spread)
  • Sprinkles

Instructions:

Cake:

  1. Heat your oven to 325 degrees Fahrenheit
  2. Generously grease the inside of a 12­cup fluted Bundt cake pan.
  3. Make the cake mix according to package directions.
  4. Pour 1 cup of batter into two separate bowls. Stir in the desired amount of red food coloring in one bowl and blue food coloring in the other, mixing well.
  5. Pour the red batter into the bottom of the pan spreading it out evenly with the back of a spoon.
  6. Pour the white batter gently over the top of the red batter; be sure to cover the red batter completely, but it’s not a big deal if you don’t. You’ll want to use the back of a clean spoon to spread the white batter.
  7. Next, carefully pour the blue batter onto the center section only of the white batter. Do not cover the white batter completely over as in the prior two steps.
  8. Bake according to cake package directions or until a toothpick inserted in the center comes out clean.
  9. Remove the cake from the oven and allow it to cool for 5 minutes in the pan before inverting the cake onto a baking rack, where it will completely cool.

Frosting:

  1. Divide the frosting into 3 separate microwavable bowls.
  2. Microwave one bowl of frosting on high for just a few seconds, until the frosting is of drizzling consistency. Stir in a couple of drops of blue food coloring and stir until creamy. Drizzle the frosting with a spoon over the top of your cake, using a back and forth motion. The kids will love to help with this part!
  3. Next, microwave the bowl of white frosting, and again drizzle over the cake.
  4. Taking the third bowl of frosting, microwave it for a few seconds, add the red food coloring, stir, and then drizzle over the cake.
  5. Once done you are with the drizzling, you can garnish the top of the cake with your choice of sprinkles.
  6. Your cake should stand at room temperature until the frosting is set, then you can transfer your decorated cake to a clean plate for serving.

Tips and Suggestions:

  • Substitute the oil in your cake mix with applesauce, this will cut down on fat, and yes it tastes great.
  • You can transfer your cooled cake to a plate prior to frosting.
  • Use the same directions for cupcakes, a sheet cake, or a double layer cake. Be creative, there is no wrong way to make this cake – just have fun with it! Best thing about this recipe is that you can use different food colorings and sprinkles to go along with any holiday!
