The Lodge features 31 guestrooms in the lodge and 26 two bedroom cottages along with 4 meeting rooms featuring views of Punderson Lake. JOB SUMMARY: The Line Cook is a mid-level food service position involving the preparation and presentation of food, at times utilizing standard recipes. Fulfills needs according to production par sheets, and completes ticket orders on the hot line. Maintains sanitation standards in the preparation area.

PREREQUISITES:

  • Must be at least 18 years of age
  • Basic education at high school level or equivalent experience.
  • Ability to stand for long periods of time.
  • Ability to frequently bend/stoop, squat, reach above shoulder level and balance, occasionally crouch, push/pull and lift/carry up to 50 lbs.
  • Ability to work holidays, weekends and other shifts as necessary.
  • Possess sufficient mobility to perform assigned tasks within production and service time frames established by the company.
  • Ability to interact with co-workers in order to assure compliance with company service standards and company inventory control procedures.
  • Ability to interact with guests in order to assure guest satisfaction.
  • Basic knowledge of the production areas of the kitchen and equipment such as slicers, steamers, mixers and kettles.
  • Basic knowledge of ServeSafe HACCP food sanitation program with ability to apply necessary portions of program.
  • Ability to understand food production procedures.
  • Ability to learn safe and sanitary knife handling skills.

ESSENTIAL FUNCTIONS:

Through the training process and your current experience, the following skills and abilities are required to successfully perform this job:

  • Prepare food of consistent quality following Punderson/Xanterra recipe cards.
  • Date all food containers and rotate as per standard operating procedures.
  • Practice safety standards at all times.
  • Cook orders as per chit from Server. Handle any special request of guests in a positive manner.
  • Prepare food items and presentations for banquet functions.
  • Start food items that are prepared ahead of time, making sure not to prepare over estimated needs.
  • Practice sanitation standards at all times. Make sure that all perishables are being kept at the proper temperatures.
  • Properly portion all items on your assigned station.
  • Control food waste, loss and usage per standard operating procedures. Assist in setting up plans and actions to correct any food cost problems.
  • Check pars for shift use; determine necessary preparation, freezer pull and line set up. Note out-of-stock items or possible shortages. Assist in keeping buffet stocked.
  • Assist in prep work of vegetables and condiments as required for the next shift.
  • Return all food items not used on next shift to designated storage areas, being sure to cover/date all perishables.
  • Prepares stocks and foundation sauces according to classical procedures.
  • Cuts meat and fish according to standard meat buyers guide.
  • Represents Company in a courteous, efficient, and friendly manner in all customer and employee interactions.
  • Follows principles of sanitation and safety in handling food and equipment.
  • Understand and follow proper Safety Policies, Procedures and Practices
  • Ability to make simple mathematical calculations as they apply to the recipes
  • Performs all other duties as assigned.

Pay Rate: $13.95 per hour to qualified candidates and the benefit package of full-time status (mainly insurance).

Candidates must  be over the age of 18 and experience is required.
