Aunt Edna’s Potato Pancakes

It’s pancake season! Now is a great time to serve up some homemade potato pancakes for your next family meal. If you have never made potato pancakes before here is an easy beginner’s recipe to get you started. This is a great way to use those leftover mashed potatoes sitting in your refrigerator. In no time at all you will have a perfect side dish to serve for breakfast, lunch, or dinner.

Potato pancakes go great with brats, kielbasa or link sausage. Top them off with a little sour cream and a sprinkle of chives, green onion, or shredded cheddar cheese. This recipe is one my Aunt Edna used when making potato pancakes for her family and I have enjoyed making them many times myself. Now it’s your turn to share it with yours.

Ingredients:

  • 2 cups mashed potatoes
  • 1 egg, beaten
  • 1 teaspoon salt
  • 1/4 cup shredded Cheddar cheese
  • 1 tablespoon butter

Directions:

In a medium bowl, mix together potatoes, beaten egg, salt, and cheese.

Melt butter in a large griddle or skillet at medium heat.

Drop ¼ cup of potato mixture onto griddle and flatten with a spatula to 1/2 inch thick or you can make them by hand as you do hamburgers. Just be sure to make them ½ inches in thickness.

Fry each side approximately 5 minutes or until golden brown.
