Colorful Easter Egg Cookies

An extremely simple, great tasting cookie that your family will love! In about an hour you can make 24 colorful sandwich cookies from start to finish that will take center stage at this year’s Easter desert table. When the opportunity arises, I love to bake with my grandchildren. This year, I choose to make these delightful cookies with my 3 year old grand-daughter Mallory. This cookie is a simple one that basically requires very little construction which makes it easy for the little ones to be involved.

Ingredients:

  • 2 boxes of Pillsbury Ready to Bake Easter Shape Sugar Cookie
  • 1 container of whipped white frosting (can tint other colors)
  • 1 bag milk or dark chocolate chips (2 cups)
  • ¼ cup sprinkles (Easter ones if available)

Directions:

Preheat oven to 375 degrees.

Place cookies 2 inches apart on an ungreased cookie sheet

Bake 8 to 10 minutes or until edges are barely a light golden color.

Cool 1 minute then remove from cookie sheet to a cooling rack. Cool completely.

Assembly:

Using two cookie halves, spread frosting on one plain surface and top with your second cookie.

Press gently together so that the frosting is seen on the outside edge.

Roll your sandwich cookie in sprinkles.

Note: You can also dip one end of your sandwich cookie in melted chocolate chips, place on cookie sheet then decorate the chocolate end immediately with your favorite sprinkles.

I like to mix and match colors at Easter time for a plate of colorful cookies.
