By now most cooks have made, or at least heard of, the oven baked ranch potatoes. Well, let’s kick those potatoes up a notch or two! In this recipe, I still use some of the Hidden Valley ranch dressing packet, but added a few additional seasonings. With this recipe you may add more Hidden Valley seasoning, depending on your personal preference, but begin with half a packet.
Ranch potatoes go perfectly with barbecued ribs, chicken, steak, and corn on the cob!

Ingredients:
- 3 lbs. of potatoes washed and cut (no need to peel)
- 1/3 cup of Vidalia onion, chopped small
- ½ teaspoon of garlic powder
- ½ teaspoon of salt
- ½ teaspoon of dried parsley
- ½ packet of Hidden Valley Ranch dressing and seasoning packet
- 3 Tablespoons of olive oil
- 1 ½ teaspoons of freshly ground black pepper
Directions:
Preheat your oven to 425 degrees.
In a medium sized bowl combine the onion, garlic powder, salt, pepper, parsley and olive oil.
Toss your potatoes in the bowl.
Place potatoes on a parchment lined pan, or 13 x 9 dish.
Bake 25-30 minutes until browned.
