Fresh Homemade Salsa

Have you invited friends over to the house lately to play cards or board games? Salsa and chips are the perfect food combination when entertaining your friends. This recipe is for a double batch. I have discovered that a single batch is never enough. Any salsa you may have leftover can always be added to your favorite hamburgers as a topping, added in your meatloaf, or enjoyed with your morning scrambled eggs.

This is a great tasting salsa that will quickly help you to eliminate those extra vine ripened tomatoes from your garden!

Ingredients:

  • 8 cups fresh peeled chopped tomatoes (red and yellow tomatoes or all red)
  • ½ cup of finely chopped onion
  • 4-8 jalapeno peppers, seeded and finely chopped
  • 2 tablespoon olive oil
  • 2 tablespoon vinegar
  • 2 teaspoon ground cumin
  • 2 teaspoon salt, optional
  • 2 garlic cloves, minced

Directions:

In a bowl combine all of the above ingredients, mixing well.

Let stand for about 1 hour.

Serve at room temperature with fresh chips.

Store in your refrigerator, covered

Suggestions:

You can add cilantro to this recipe if you enjoy its taste, not all do.

Black olives, chopped fine, taste great, as do Vidalia onions.
